The coconut press is part of the Direct Micro Expelling (DME) process for making virgin coconut oil in significant quantities at a farm/village level within one hour of opening a coconut. The DME process involves grating the mature coconut flesh, drying this shredded coconut to a specific moisture content on a flat-bed drier and then expelling the oil with a robust low pressure manual press.

About the Inventor

Dan was born and raised in Kenya where his parents were farmers. Following High School in the UK and National Service as a pilot in Kenya, he studied Economics at Rhodes University in South Africa and Agricultural Economics at Cornell and Stanford Universities in the USA. His Doctoral thesis at Stanford was on the smallholder tea industry that was developing very rapidly in Kenya. 
He taught at the University of Nairobi until 1972 when he moved to the Australian National University in Canberra where he was involved in teaching and research in Agricultural Development Economics.
